1 lb. ground turkey
1.5 lbs butternut squash, peeled and cubed
1 can black beans
1/2 large onion, sliced
1 green pepper, diced
1 red pepper, diced
1 jalepeno pepper, sliced
1 can diced tomatoes, organic, BPA-free
2 cups vegetable broth
1 T Extra virgin olive oil
1 tsp cumin
1 tsp chili powder
Salt/pepper to taste
Cilantro, chopped, as garnish

Brown turkey and set aside.  Add olive oil to pan, saute onion, peppers for about 5 mins.  Add spices, squash, black beans, tomatoes and broth and stir.  Bring to a low boil and simmer for about 20 mins or until sauce thickens a bit.  Garnish with fresh cilantro.


Other garnishes may include hot sauce and/or sour cream (if tolerated).  Freezes well;  make a double batch!
