We all know the rest of that sentence.  It’s what you think and hear when something in life that meant a lot to you comes crashing to a screeching halt.  It can be a person place or thing.  But the trauma of a loss can be incredibly hard to bear. Today I’m writing to you to share the story of a loss in my life.  And to tell you what I’m doing about it.  And how it just might benefit you!  This will also explain why I’ve laid low these past couple of months. On June 30, I packed up and moved 18 years of memories from the home where I raised my children.  Basically the only place they’ve ever called home.  But it was time.  I’ve been a divorced, single mom for a number of years and my youngest just graduated high school and is off to college! The idea of townhouse living was very appealing, especially right on a golf course!  My BF of 5 years and I decided to take the next step in our relationship and move in together.  My thoughts often drifted to a happy new blended family life complete with lots of gatherings, good times and togetherness.  But that’s not what happened.  Just the opposite.  Expectations differed.   Tempers flared.  Issues escalated to a level of craziness.  Without going into detail, ties were severed and I am now facing the future on my own.  Sigh. It’s time to re-define happiness.  For me, a big part of that will mean expanding what The Right Track Wellness has to offer!  Lucky for you, a panel of 3 very willing, able and eager to learn volunteers has already stepped up to the plate – I will be developing new recipes and cooking classes and trying them out on my friends!  We are going to meet once a month to discuss meal planning, clean eating, recipes and workshop ideas.  It’s a win-win-win!  I get to spend time with a very special group of friends, they get new healthy ideas, habits and recipes.  And last but not least, YOU win – because these new recipes and classes ultimately are being designed for YOU by like-minded, busy women that want to make health a priority!  Once we taste-test the recipes, and know what works well, I will be creating and sharing some of the results and ultimately want to offer them online.  Yay! Our first session took place recently and was a huge success!  It included a lot of laughs along with a massaged kale salad, sweet potato and chickpea curry over quinoa, grain-free-ginger turkey meatballs in lettuce leaves (I shared this recipe on The Right Track Wellness Facebook page – check it out!), and  a raw apple crisp with coconut milk whipped cream for dessert.  We discussed the benefits of eating clean as we prepared the meal together. We are in the process of coming up with a name for the cooking club – suggestions welcomed!  The girls were very inspired (which just makes me soooo happy!).  Here’s a testimonial I received from one of them: “Hi Gail, Just a note to let you know how much I enjoyed our healthy cooking class.  The food was satisfying and delicious!  The best bonus was that the recipes were interesting yet simple.  I actually put my new knowledge to work tonite and prepared my own healthy dinner using some of the same ingredients and tips that you shared with us.  Even my husband John was impressed!  I am off to whip some coconut milk whipped cream to dollop on my organic strawberries for dessert! Thanks again, Lisa” Here are links to some of the insanely delicious recipes we made: Massaged Kale Salad Raw Apple Crisp Coconut Milk Whipped Cream (definitely try this!)
